Sweet Potato Skins with Guacamole & Harrisa

Potato skins are a football snack staple. Who knew they could be healthy????

Ingredients

4 medium sweet potatoes
1 Tbsp. olive oil
1/4 cup 2% milk
1/4 tsp. kosher salt
Ground black pepper, to taste
1 Tbsp. Harissa paste 
Guacamole (store bought or freshly prepared)

Pork and Pinto Bean Nachos

Nachos are my favorite party food. This recipe will sure be a hit at yours.

Ingredients

Meat:

1 (1-pound) pork tenderloin, trimmed
2 tablespoons olive oil, divided
1/2 teaspoon salt, divided
1/4 teaspoon black pepper
Cooking spray
2 tablespoons fresh lime juice
1 teaspoon minced garlic

Beans:

1 can chipotle chiles in adobo sauce
2 tablespoons water
2 teaspoons fresh lime juice
1 teaspoon chili powder
1/4 teaspoon salt
2 (15-ounce) cans pinto beans, rinsed and drained
4 applewood-smoked bacon slices, cooked and crumbled

Topping:

1 1/2 cups chopped plum tomato
1 cup diced avocado
1/2 cup chopped jicama
1/3 cup chopped onion
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
Remaining ingredients:
6 ounces sturdy tortilla chips (8 cups)
1 1/4 cups (5 ounces) shredded reduced-fat Colby and Monterey Jack cheese blend
1/4 cup chopped fresh cilantro
1 jalapeño pepper, thinly prepared

Nutty Pimiento Cheese Balls

 

Cheese Please.

Ingredients

2 ounces reduced-fat cream cheese (Neufchâtel), softened (generous 1/4 cup)
8 ounces shredded sharp Cheddar cheese (about 2 cups)
8 ounces shredded Monterey Jack cheese (about 2 cups)
3 tablespoons low-fat mayonnaise
3 tablespoons drained chopped pimientos
1 teaspoon grated onion
1/8 teaspoon garlic powder
Pinch of salt
Pinch of freshly ground pepper
1 1/2 cups finely chopped toasted pecans (see Tip)

These bite size cheeseblls will be a hit with your kids

 

Pizza Pockets

Ingredients

1 tablespoon olive oil
8 ounces Italian turkey sausage
1 cup tightly-packed arugula (about 1 ounce)
4 ounces cream cheese, room temperature
1/3 cup grated Parmesan, plus 1/4 cup
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 (13.5-ounce) package of store-bought pizza crust (recommended: Pillsbury)
All-purpose flour, for rolling out pizza dough
1 egg, beaten (for egg wash)
1 1/2 cups marinara sauce, store-bought or homemade

Turkey Kibbe Kebabs with Two Sauces

Ingredients

 

2 lemons
3/4 cup finely chopped flat-leaf parsley
1/3 cup coarsely chopped fresh mint
1/3 cup coarsely chopped walnuts
1 garlic clove, finely chopped
2 tablespoons extra-virgin olive oil
2 tablespoons water
1/4 teaspoon kosher salt
Pinch of freshly ground black pepper
Pinch of Aleppo pepper

Yogurt-garlic sauce

2 cups plain low-fat Greek yogurt
1/2 cup water
1/2 cup finely chopped flat-leaf parsley
2 garlic cloves, finely chopped
1/4 teaspoon kosher salt

Turkey kebabs

1 pound ground turkey, dark meat
2 tablespoons extra-virgin olive oil, plus more for brushing
1 cup medium-grade bulgur, rinsed and drained well
1 small onion, coarsely chopped
1 1/2 tablespoons all-purpose flour
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
1/4 teaspoon Aleppo pepper
Warm pita bread, for serving
