Apricot Basics

Apricot season is near but doesn't last very long. It runs less than two months, from about mid-May to early July. Here are some delicious recipes that you can enjoy while they are available.


To shop for the best apricots, look for local fruit, those that are deep orange, fairly plump, and soft enough to yield to gentle pressure (but not mushy). If you get some that are unripe, place apricots in a paper bag at room temperature for one to two days. Fully ripe apricots should be used or eaten immediately; otherwise, store them in the refrigerator for up to one week.
